Today was my first day back to work but I’m not here to talk about that…I’m talkin’ tomatoes. I have an abundance between the CSA box and my own plants.
This was one morning’s harvest. Crazy right!?! Especially since I really don’t have that big of space.
I saw a recipe from our CSA farm that was called September soup which as a roasted tomato soup. I decided to do my own take on the soup with the fresh produce I had on hand.
I used several kinds of tomatoes including cherry size, sweet peppers, garlic, onion and one very hot jalapeno. I seasoned with oil, salt and pepper. I roasted the tray for about an hour I think. I actually had to stop and start partway through for some reason I can’t even remember now…
I dumped the tray of veggies into a stock pot and covered with water. I cooked it down for another 45 mins or so. Then I took my immersion blender and pureed the whole works.
I ended up with a quart and a half of some really rich tomato soup. Its a little on the spicy side so I’ll likely mix some milk or cream into it when I heat it for soup. I’m just going to freeze the soup.
Or maybe I’ll sample it as Bloody Mary mix…
That was a yummy taste test this weekend! It needed to be thinned out some but good flavor. Here in the Midwest (at least in Minnesota and Wisconsin) a “snit” or beer chaser is always served with a Bloody Mary. Is that a thing where you live?
Your variety of tomatoes is amazing Halle. I’ve been picking lots too. It is crazy, isn’t it? And I like your tomato soup variety. I bet it will taste delicious. And I’m not a bloody Mary person, but what a good idea for a way to use tomatoes, and drink your produce. I hope you have a great start to the school year, and happy T day too.
This really IS all about tomatoes. Wow. You sure cooked those down to soup. I am super impressed you made it using what you had on hand.
I’ve never had a Bloody Mary, so I have no idea what a snit is. It sure looks good, though, except the beer needs to be a stout (grin). Thanks for sharing your incredible tomato harvest and Bloody Mary with us for T this Tuesday, dear friend. Did J get off to college?
Great yield on your tomato crop. They demonstrate your green thumb. It’s wonderful you know how to preserve the fruits of your labors so you can remember those summer tomatoes during the cold days of winter.
Wow on the tomatoes. That haul would turn Himself’s eyes green. He was watching a tomato, waiting for it to get to the perfect ripeness to pick it. It looked beautiful, but the chipmunk had taken a big bite out of the back! Glad your harvest went better. Happy T Day
I’m not a bloody mary fan, but I liked the sound of cream added to the tomato soup :) Just seeing all those ripe tomato’s is a beautiful site! Enjoy ~
The soup sounds great! What a great thing to do with your one day harvest. Happy t day!
Hmmmm. Looks much better than my beetroot-soup!
And I just had a very unhealthy baguette from the supermarket. At least a yummy bear, have a nice T-Day!
Wow! What a great tomato harvest! The tomato soup looks yummy and I’m sure it made a perfect Bloody Mary. I’ll join you if there is any left…
Happy T-Day,
Hugs,
Lisca
Ohhh wow what a great tomato soup. I have lots of toms too and now I know what I will do with them. Thanks for the idea. Ohhhh beer anytime. Have a great day.
Wow, so much homegrown goodness 😀. I bet that bloody Mary tasted amazing – Happy T Day wishes! Hugs Jo x
Wow, what a variety of tomatoes! That first photo is purely delicious. Tomatoes at this time are the most delicious I think. Adding some milk or cream to the soup sounds good, it will lower the spice a bit. Happy T day!
Your soup looks and sounds delicious! Your garden has been very productive. I love all the colors.
Happy Tea Day,
Kate
Wow your tomatoes are amazing! You must be getting really good weather for them to grow like that, and so many varieties. Happy T Day Elle
