Today I’d like to share my new refreshing summer drink with you….in my favorite glass, of course. I love this glass so much.  Recently I had a nightmare that I broke the top off it in a wickedly jagged form…I was very happy to wake and realize it was just a bad dream.

So what’s in the glass?? It’s a shrub or drinking vinegar.  Ok…not as gross as it sounds. In fact, quite tasty. The first I ever heard of a shrub was from Kim over at art in red wagons.  Recently, I’ve started out the morning drinking a tablespoon or so of raw apple cider vinegar in a glass of water usually with a touch of honey or molasses.  I know…a little wacky but I like tart flavors and the health benefits are great.

This brought me back to thinking about a shrub…then we got our first CSA box this past Wednesday.  Not a whole lot in it since our growing season has been less than ideal so far. The was rhubarb though. I’m the only one in the family that likes it. I started searching recipes on Pinterest and a shrub recipe appeared. shrubMaking a shrub is not an exact science. Here’s what I did.

I chopped approx 2 cups rhubarb and a half dozen or so organic strawberries into a glass bowl.  Then sprinkled 1 cup of sugar over top and shook it around to coat. This mixture went in the refrigerator overnight to macerate.

I poured everything into a clean dry canning jar..it was approx 2/3 full at this point. I then filled the jar to the neck with raw apple cider vinegar. I labeled it and let it sit on the counter, giving it a shake everyday. The recipes I found said to let it sit for a week before draining off the liquid and storing it in the fridge but I was very anxious to try it.

Making the shrub is very simple. I poured approx 1/4 glass of shrub syrup over ice then filled the glass with club soda. It was slightly tart, slightly sweet and bubbly. Very refreshing.

What do you think? Would you try this? Does it sound appealing at all?

    My grandmothers used to make pink”lemonade”with rhubarb . Lots of sugar and water in the jar, and I do remember it sitting on the counter.

    I’ve never heard of “shrub” and am not finding it tempting ;) I have heard of the benefits of cider vinegar drunk in the morning as you describe but have never tried it myself. I should branch out a bit for health’s sake, I think. Thanks for the suggestion :)

    I’ve not heard of a shrub either, but I have tried the tablespoon of vinegar in the morning and when I was a kid my Mom always grew rhubarb. It doesn’t grow well here in California and miss that sour tastily stuff!! LOL

    This is new to me. In India we make pickles using raw mango. This looks exactly like that.A tsp of Apple cider vinegar in the morning is a great way to start the day.

    We too enjoy a shot of daily vinegar…
    shame we all didn’t buy stock in Bragg’s ;-)

    Stewed Rhubarb is something I always enjoyed as a girl (my parents grew it) and adding strawberry is a nice combo…
    the only thing about the shrub recipe is that cup of sugar…
    I really want to cut down on my sweets consumption and don’t like faux sweeteners…
    sounds like there is plenty of wiggle room in the recipes…

    I’ve never heard of “shrub” but except for so much sugar I’d def. try it! My great grandmother taught me how to make rhubarb custard pies and our family growing up always loved that Spring treat. Sadly rhubarb is not so easy to grow here the last few yrs and very expensive in the stores:( Thanks for sharing and happy T day!

    I’ve never heard of a shrub either, and I think I’d at least taste it before passing judgement. I don’t tend to like sweet drinks, so I might cut down on the sugar, too.

    For awhile I was taking a teaspoon of honey with a dash of cinnamon every day. It is supposed to build immunity and help arthritis, but I am not sure I really felt any benefit. Never heard of taking vinegar though.

    I remember when Kimmie first showed that recipe. I wouldn’t like it, since vinegar makes me sick. But I’m glad you showed it, because I had forgotten all about this drink.

    Yes this does appeal to me. Greatly!
    I was drinking cider vinegar every morning when I had a very bad case of IBS and there is always a bottle in case!
    I was thinking of you on the weekend when I looked in my bowl of bottle caps as I want to make a mobile like yours! Hence my reason for drinking bottles of pink cider! That is MY excuse and I am sticking to it!

    A drink called a Shrub is new to me too. I’ll have to explore the possibilities. I do like rhubarb. It wouldn’t seem like spring/summer without at least one strawberry/rhubarb pie.

    I have heard of a shrub, but didn’t remember exactly what it was…I think the strawberry & rhubarb version does sound pretty good! I would try it… :)
